This soft and chewy focaccia loaded with sun-dried tomatoes, mozzarella, and basil can be made in just about 60 minutes! ⏰

PRE-BAKING Q: Do you listen to music while you bake? What songs are on your playlist?

INGREDIENTS: 
2 c. AP Flour
3/4 c. warm water
1 package (7g) Platinum Yeast
2 tbs. olive oil
1 tsp. granulated sugar
1/2 tsp. table salt
1 jar (8.5 oz.) sun-dried tomatoes in olive oil
10 fresh basil leaves, torn
1 1/2 c. shredded mozzarella

Let's get started 👇
With a dough hook fitted on your stand mixer (or large bowl if hand kneading), combine flour, water, yeast, oil, sugar, and salt. Knead for 5 minutes, until dough is soft, smooth, and has formed a firm mass. 

Turn dough onto countertop and roll into large oval or rectangle - about 8x10 in.

Place rolled dough on greased cooking sheet, cover with plastic wrap and let it rise for 25 min.

Preheat the oven to 350°F. After the dough has risen, use your fingertips to create dimples evenly over the surface of the dough. (Like you're playing piano. 🎹)
It's okay to press all the way down - the dough will reinflate quickly.

Top your dough with sun-dried tomatoes and oil, runoff is okay. 
Add half of your torn basil leaves, reserving the rest for garnish.
Add an even layer of cheese on top.

Bake for 23-26 min., or until cooked through and cheese has melted. Times can vary based on how juicy/oily tomatoes are, amount of cheese, and oven. Watch your bread, not the clock.

Remove from the oven, garnish with the rest of your basil. Best served right after baking, will be good leftover for up to 2 days.

1/2 c. (120g) whole milk
1/4 c. (57g) unsalted butter
2 large (100g) eggs
Egg wash
1 tbs. (15g) water
1 large (50g) egg

1 large egg 
3 tbs. (63g) honey
1 tsp. (4g) fine sea salt
4 tbs. (56g) unsalted butter
Egg wash
1 egg + 1 tbs. water, whisked 
Glaze
2 c. confectioner’s sugar
1/4 c. whole milk
Pinch of salt
1/2 tsp. vanilla bean paste
